Roasted Red Onion & Strawberry Balsamic Salad

This combination sounds highly odd, but trust us and give this one a go – you won’t regret it. The red onions combined with the sweetness of strawberries, along with the sharpness of balsamic vinegar create a truly tantalizing salad that is to die for.

SALAD INGREDIENTS

-       2 Medium sized red onions

-       2 tbsp balsamic vinegar

-       10-12 Strawberries

-       1 Handful rocket

-       2 Handfuls baby spinach

DRESSING INGREDIENTS

-       1 Tsp balsamic vinegar

-       1.5 Tbsp olive oil

-       ¼ Tsp dried mixed herbs

-       Salt & pepper to taste

DIRECTIONS

  1. Peel and chop the onions into small wedges.
  2. Place the onion wedges onto a baking tray – Drizzle with a dash of olive oil and 2 tbsp balsamic vinegar.
  3. Roast on a high heat for 20-30 minutes until onions have softened – Turn occasionally during cooking.
  4. Once cooked, remove and allow to cool slightly.
  5. Cut the strawberries in half and discard green leaves.
  6. Combine the strawberries in half and discard green leaves. – Toss well.
  7. Prepare the salad dressing by combining all dressing ingredients and simply whisk with a fork.
  8. Add salad dressing to the salad and toss well- Serve with baked fish or chicken and sweet potato mash.
