Gluten-Free Fridge Cakes

Who needs flour when making cakes and treats - These simple snacks prepared with various seeds are a great delicious and nutritious alternative.


-       8 Tbsp mixed seeds (e.g. flaxseeds, pumpkin seeds, sesame seeds & sunflower seeds)

-       3 Handfuls goji berries

-       1 Handful pitted dates

-       4 Tbsp cocao powder

-       3 Tbsp coconut oil (melt coconut butter first)

-       1 Tsp desiccated coconut

-       1 Tsp cinnamon powder


  1. Place all the ingredients, except the coconut oil into a food processor - Pulse a few times to start creating a stiff coarse paste.
  2. Now add the coconut oil to the rest of the ingredients in the food processor. Then process the ingredients on high power until a smooth firm paste is formed.
  3. Place the paste into a small cake tin or flan dish (about 10 inches in size), and press down firmly to completely fill the case. Refrigerate for 3 hours or until firmly set - Slice into about 6 even pieces and serve with fresh berries of your choice (e.g. blueberries, strawberries, raspberries).
