Coconut Berry Popsicles

INGREDIENTS

-       500ml coconut milk

-       2 scoops of Vanilla Essential Whey

-       1 tbsp coconut sugar or honey

-       5 medjool dates and 150g raspberries

-       100g grated coconut

DIRECTIONS

  1. In a food processor, combine the dates into a thick paste
  2. Add the coconut milk, shredded coconut, coconut sugar and protein powder. Mix for 2-3 minutes
  3. Add the raspberries and pour the mixture into the lolly moulds and freeze for 2 hours (We like it with chunks of raspberry in the mixture)
  4. Once frozen, enjoy!
