Chilli Con Carne


-       1 tsp coconut oil

-       500g organic minced beef

-       1/2 can chopped tomatoes

-       1 medium onion - sliced

-       1 chopped red pepper

-       1 can of kidney beans

-       2 tsp of chilli powder

-       2 cloves garlic

-       2 tsp cumin


  1. Heat coconut oil in a pan and fry the onion for 5 minutes until soft. 
  2. Add the red pepper, garlic, chilli powder and cumin and fry for 5 more minutes
  3. Add the minced beef and brown the meat - make sure it sizzles not stews
  4. Once the meat is browned, add the chopped tomatoes and kidney beans and simmer for a further 15 minutes, stirring occasionally

Serve with a little avocado and a spoon of yoghurt
