Chicken and Quinoa Salad

  • INGREDIENTS

    -       1 chicken breast

    -       60g quinoa

    -       1 red pepper

    -       1 courgette

    -       Pomegranate seeds

    -       Juice of half a lemon

    -       Sprigs of fresh mint

    DIRECTIONS

    1. Grill the chicken breast on a griddle
    2. Grill the courgettes and peppers in a little coconut oil
    3. Whilst these are cooking, get your quinoa ready by placing it in a pan of boiling water and simmering for 10-12 minutes or until soft
    4. Assemble the salad by mixing the quinoa with the veggies with a squeeze of lemon juice and a pinch of salt and pepper. Add the chicken and pomegranate seeds with the mint leaves and serve!
