Baked Courgette Fries

INGREDIENTS

-       1 cup of panko breadcrumbs 

-       1/2 cup of parmesan cheese

-       1tbsp mixed herbs

-       salt/pepper to taste 

-       2 eggs

-       1/2 cup flour

-       4 courgettes

-       8oz creme fraiche

-       lemon zest

-       3 tsp lemon Juice

-       2 tbsp mixed herbs 

DIRECTIONS

  1. Preheat the oven to 200 degrees, coat a baking tray with a light spritz of oil and leave
  2. In a bowl, combine the panko, cheese and mixed herbs, season with a little salt and pepper
  3. Cut courgettes into chips and dip into flour, then egg, then fully coat with the panko mixture.
  4. Place onto the baking tray for 20-23 minutes

 METHOD FOR THE DIP

 Add lemon zest, lemon juice, herbs, salt and pepper to the creme fraiche. Serve with parsley.
