Quinoa and Blueberry Pancakes

INGREDIENTS

-       50g of Slim & Tone protein powder

-       150g cooked quinoa

-       1tbsp ground flaxseed

-       2 eggs

-       1/2 tsp baking powder

-       1/4 tsp cinnamon

-       Handful of blueberries

DIRECTIONS

  1. Add all your ingredients (except the blueberries) into a blender and blitz until smooth. Let the batter stand for a few minutes.
  2. Use coconut oil to grease your pan and use a ladle to add some batter to the pan. Wait until the pancake begins to bubble and flip it over until both sides are golden brown.
  3. Serve with blueberries.
